Quick answer

Halmaddi is a natural resin tapped from the Ailanthus malabarica tree of the Western Ghats. In South Indian hand-rolled incense it binds the paste to the stick and adds a soft, sweet, honeyed note, which is why halmaddi incense often feels slightly soft to the touch.
